The Boojum chain of Mexican burrito restaurants has plans to open a new outlet fronting onto Eyre Square, with the creation of 25 new jobs.

Andrew Maxwell and Brendan Traynor of Boojum 3 Ltd, have sought permission for a change of use of the former Spar shop at 25 Eyre Square (beside the Skeff) to a restaurant and take-away.

According to the plans, there will be seating for 35 people and it will be open from 11.30am.

“An existing Boojum restaurant is located at Spanish Parade and its opening hours are from 11.30am to 10pm, in this regard it is considered that there will be no late-night noise nuisances from the proposed restaurant.

“It is anticipated that approximately 25 new jobs, with a mix of full and part-time will be employed, however this may vary at peak times.

“It would be a welcome development for the city centre and would increase the attractiveness of Eyre Square for restaurant/food outlets. It would also help increase the pedestrian footfall on the western side of Eyre Square, and improve the streetscape by occupying a vacant building,” the application reads.

Owners of the building, John O’Callaghan and former UCG, Connacht and Ireland rugby player Neville Furlong – who also own the adjacent Kinlay House Hostel – have given their consent for the restaurant planning application.
